Sweet Potato Fries

The first time I made these, I had planned to make sweet potato latkes, but didn’t have a recipe at hand and was short on time, so I decided to make oven-fried sweet potatoes. These were soooo good, gobbled up immediately by my son and I before my husband even got home! My guess is that these do not taste as well reheated, as they will get soggy, but they haven’t lasted long enough in my house to know for sure. Time the cooking so that they will be ready when the main course is, sprinkle with salt, and watch them disappear!
 
Ingredients

2 pounds garnet yams or sweet potatoes (garnet yams are sweeter)
1/3 cup vegetable oil
Sea salt 

Instructions

Preheat oven to 350 degrees.

 

Cut the sweet potatoes into long thin French fry shapes, about 3/8-1/2 inch wide and 3-4 inches long. Place the oil in a bowl, add the potatoes (in two batches), toss until well coated with the oil, and place in a single layer on a greased cookie sheet. You may need two cookie sheets to hold all the potatoes.

Bake for 30 minutes, then turn the potatoes with a spatula to cook evenly. Cook another 15 minutes. If the potatoes are not yet sizzling and crisp, raise the oven temperature to 400 degrees and cook for another 5 minutes (or switch the setting to convection bake for 5 minutes). Use the spatula to remove the potatoes to a platter topped with a double layer of paper towels (to absorb any excess oil), sprinkle lightly with sea salt, and serve immediately.

Makes 4 servings.
