Babs Glazier

 

Food Editor's Note:

This is one of those simple recipes that you can't mess up and that everyone loves. My friend Babs has made this for numerous Chanukah parties at my home and no matter how much she makes, it's always gone! She uses Macintosh apples, but you can try different varieties. Preparing the apples is a cinch if you use one of those devices that peels, cores, and slices with a turn of the handle.

 

Ingredients

 

10-20 apples
1-2 cinnamon sticks
apple cider
maple syrup to taste

 

Peel, core, and slice the apples. Pour one cup of apple cider in the bottom of a pot. Add apples and cinnamon sticks and simmer. Keep adding apple cider as liquid is absorbed. Cook, stirring occasionally, until you reach the consistency of applesauce.

 

Cool the sauce and remove the cinnamon sticks. Add maple syrup to achieve desired sweetness. Refrigerate until serving, or freeze in plastic bags or containers.
 

 

Food editor’s note: For 10 large apples, I use 1 cinnamon stick, about 1 1/2 cups of apple cider, and about 1 tablespoon of maple syrup.
