Aunt Raela's Passover Strawberry Freeze

Adele Bacow

Food Editor's notes:  This only has a few ingredients, is easy to make, and will be a very pleasant addition to your seder meal.  In fact, it is a great dessert for year-round.  It's refreshing and healthy (and pareve!), like ice cream but with a lighter, mousse-like texture.  The strawberry flavor shines through - and Adele says this can be made with raspberries as well.  Serve this alone, with some added fresh fruit, or accompanying a slice of fluffy Passover sponge cake!

One egg white
One pinch salt
One tablespoon lemon juice
1/2 cup sugar
One cup fresh strawberries or raspberries

Beat egg white until foamy and add salt.  Continue to beat and add sugar.  When peaked, add sliced or crushed strawberries and lemon juice.  Continue to beat for 15 minutes until peaked.  Store in freezer.

Adele Fleet Bacow is president of a community planning consulting firm, mother of two great sons, and the First Lady of Tufts University (her husband Larry is the President). She is also a wonderful cook and a great friend to the Food Editor.
